Authentic JAMAICA VALLEY Brown Stew Chicken
Ingredients

1kg of mixed chicken parts chopped medium

2 cups of water

1 onion
-
2 tomatoes
-
2 scallion
-
1/2 a scotch bonnet pepper
-
¼ red bell pepper, ¼ yellow bell pepper, ¼ green bell pepper

2 cloves of garlic
-
4 sprigs of fresh thyme
-
1tsp Jamaica Valley Pimento Scotch bonnet pepper seasoning
-
2tsp Ginger
-
1tsp Jamaica Valley Browning

2 tsp Jamaica Valley Garlic powder
-
2 tbsp Jamaica Valley Chicken spice seasoning
-
1tbsp Jamaica Valley Chicken seasoning

2 tbsp Jamaica Valley All purpose seasoning
DIRECTIONS

Wash chicken, with either lemon, lime juice, or vinegar

Chop the scallion, scotch bonnet pepper, garlic, onion, tomato, thyme, bell peppers, ginger

Season chicken with scallion, scotch bonnet pepper, garlic, thyme, Onion, bell pepper, Jamaica Valley All purpose seasoning, pimento scotch bonnet, garlic powder, chicken spice, chicken seasoning , ginger & Jamaica Valley browning . Marinate for at least 2 hours

Remove the scotch bonnet pepper, garlic, onion, tomato, thyme, bell peppers, ginger

Fry the chicken in 2 tbsp of oil for about 5 minutes.

Stir in the water, scotch bonnet pepper, garlic, onion, bell peppers , ginger turn down the heat and simmer the pot until the chicken has softened (about 30-35 minutes), stirring occasionally.

Add Tomatoes, Fresh thyme (1 tbsp tomato puree optional) and simmer for a further 10-15 minutes
