JAMAICAN BROWN STEW CAULIFLOWER [VEGAN, GRAIN-FREE]

Ingredients 

  • 1 medium cauliflower

  • 2 tablespoons coconut oil

  • 1 tbsp Jamaica Valley All Purpose Seasoning

  • 1 tbsp Jamaica Valley Vegan vegetable seasoning

  • 1 Tsp Jamaica Valley Pimento Scotch Bonnet Pepper seasoning

  • 1/4 cup onion

  • Diced 2 tablespoons carrots

  • Diced 2 tablespoons green bell pepper

  • Diced 1 clove garlic finely minced 1/2

  • 1 tablespoon chopped thyme

  • 1 tbsp finely chopped ginger

  • 1 tbsp Jamaican pure honey

  • 2 medium tomatoes

DIRECTIONS

TO BROWN CAULIFLOWER:

  1. Cut cauliflower into flat steaks. Heat a large skillet on medium-high heat. Then add coconut oil. Allow oil to heat for 30 seconds.

  2. Separate the cauliflower for the rest of the ingredients. Add cauliflower steaks to hot pan in single layer, making sure to not overcrowd the pan, so that the cauliflower will properly brown. You may have to do it in multiple batches depending on the size of your pan.

  3. Allow the cauliflower to brown on one side before turning (3-5 minutes). Turn and repeat on the other side. You may also have to stand the pieces on their heads to ensure the florets also brown.

  4. Remove cauliflower from pan and transfer to a clean plate.

  5. To make the Brown stew sauce Keep pan at medium heat.. Add onions, pepper, thyme, Garlic, Ginger, tomatoes to pan. Sauté, stirring often until onions are soft (4-5 minutes). Add 1 cup of water. Then add Corriander, Honey, Jamaica Valley Seasonings & Carrots.. Add Cauliflower to the pan Raise heat from medium to high, Put on the pan lid, & allow sauce to thicken & until cauliflower is fork-tender. (This is where you can easily stick a fork through the cauliflower, but the cauliflower remains on the fork when suspended, rather than quickly sliding off.)

  6. Serve alone, or with Rice & Peas, Ground provisions (Yam, Cocoa, Sweet potatoes), or steamed Spinach/Cabbage..
