Real Jamaican Oxtail

Ingredients
  • 1kg of oxtail

  • 1 tin of butter beans

  • 1 onion

  • 2 tomatoes

  • 2 scallion

  • 1/2 a scotch bonnet pepper

  • ¼  red bell pepper, ¼ yellow bell  pepper, ¼ green bell pepper

  • 2 cloves of garlic

  • 4 sprigs of fresh thyme

  • 2tsp whole pimento (optional)

  • 1tsp Jamaica Valley Browning

  • 2 tbsp Jamaica Valley Oxtail Meat seasoning

  • 2 tbsp Jamaica Valley All purpose seasoning

  • 5 cups of water

Instructions
  1. Wash Oxtail,  that has been pre cut into medium  slices, with either lemon, lime juice, or vinegar

  2. Chop the scallion, scotch bonnet pepper, garlic, onion, tomato,  thyme, bell peppers

  3. Season the oxtail with scallion, scotch bonnet pepper, garlic, thyme,  Onion, bell pepper, Jamaica Valley All purpose seasoning, oxtail meat seasoning & browning . Marinate for at least 2 hours

  4. Remove the Scotch bonnet pepper, garlic, onion, tomato,  thyme, bell peppers

  5. Fry the oxtail and seasoning in 2 tbsp  of oil for about 10 minutes.

  6. Stir in the water, scotch bonnet pepper, garlic, onion, bell peppers , whole pimento, turn down the heat and simmer the pot until the oxtail has softened (about three hours), stirring occasionally.

  7. Add the beans, Tomatoes, Fresh thyme (1 tbsp tomato puree optional) and simmer for a further 30 minutes
